This is a Fully Washed (the fruit is completely removed from the bean before sun-drying) coffee of the S795 variety, a Typica hybrid more resilient against the effects of leaf rust. Similar to other Indonesian coffees, Sulawesi is known for producing higher altitude beans with notable earthiness. While it's not quite as earthy as Sumatran, it doesn't have quite as clean of a finish as Papua New Guinean coffee. Sulawesian coffee's most defining characteristics are it's silky body, smooth finish, and syrupy aromas.
