This is a Fully Washed (the fruit is completely removed from the bean before sun-drying) blend of Bourbon, Caturra and Villa Sarchi beans from the Huehuetenango region of Guatemala. Pronounced Way-Way-Ten-Nang-Go, this coffee is grown at a high altitude that causes coffee fruit to ripen slowly, which results in a denser, harder bean with more robust flavor and pronounced acidity.
Cupping notes for this coffee are: medium bodied with a long, but clean finish, hints of caramel, lime, raisins and a complex, citric acidity.
